Run, girl, run!!!

Late in the summer I started running again. I've been hesitant to do so because last summer I ended up with a stress fracture from running. But, so far, so good and I'm really loving it! I was lucky enough to do the Women's Fitness celebration IN THE RAIN with some of my friends back in September. We ran the 5k and it was a blast!

This weekend, we ran the Prison Break Run! Suzanne and Lisa did the 5K and Brooke and I ran the 10K. It was a beautiful morning! Aside from fearing for my ankles running on the dirt and gravel road, it was a lot of fun. I am amazed at what a good runner Brooke is ... she has been running for years!

A Place to Start



I have a whole summer's worth of stuff to blog and we are speeding towards the holidays! But for now, we'll just start here ...

I purchased this adorable book today at Costco ... Hello, Cupcake!. I've been seeing it in and around the internet, all over blogging sites, in magazines. etc. But when I picked it up today and actually thumbed through it, I knew I HAD to have it!

There are some of the most creative cupcake ideas I've seen! And the authors give step by step instructions and seem to make it all very do-able! (We'll see what happens when I actually attempt to make something!)

Anyway ... I am supposed to be making cupcakes for Lily's preschool Halloween party and am now leaning toward the adorable Owl treats!




And Thanksgiving is just around the corner, I'm thinking we'll need some Turkey Cupcakes to get us all sugared up!

A little girl and her tea party ...

I have been meaning to post some pictures from Lily's birthday party and it's just been such a whirlwind around here lately, I'm just now getting to it.


We had Lily's little friends over for her birthday Tea Party and it was so much fun ... no boys allowed! We started the morning with purse making. I bought some cute little inexpensive wood-handled totes from Oriental Trading Co. and the girls used adhesive jewels, stickers, charms and ribbons to decorate their own purses.


Next we moved to dress-up time where the girls could put on hats, necklaces, rings, bracelets, dress-up shoes, etc. And then it was time for tea!

I made cream cheese and jelly sandwiches which I cut out using mini cookie cutter shapes of butterflies, hearts and flowers. I also served grapes, cheese cubes (with cute flower toothpicks) and pizza cut into triangles and other assorted goodies. We enjoyed pink lemonade for "tea" out of the teapot and Lily and I found the cutest little decorative plastic punch cups for each girl to use to "sip tea." We topped of the meal off with pink cupcakes! The girls were all so sweet and WELL BEHAVED (amazing the difference in a room full of little girls versus rowdy boys!)



We opened gifts and let the girls play and that was the end of the party. It was relatively simple and they all seemed to have a good time. I can't believe Miss Lily is already 4!

Yes, it's hard to admit ... I used to be a HUGE New Kids On The Block fan. And I know there are some lurking former fans out there as well (certain Alameda Junior High alums, you know who you are!) who used to swoon with me! Well ... as I'm sure everyone's heard, they are back together and touring. I can't decide if that's a good thing.

Mice are nice...

When they are made of strawberries! Zach's class held a special summer birthday party today. In anticipation of a lot of sugary treats, I thought I'd try to make something semi-healthy. So ... we opted for these fruity friends ...

The original recipe called for almond sliver ears, but due to nut allergy issues, I opted to use broken pieces of Pringles for the ears. I also used mini chocolate chips for both the eyes and nose since I didn't have any black icing. The tails are made out of licorice. I snuggled them into a cupcake liner with a wedge of cheese.


The only kind of mouse I want in my house!

A little sunshine in all this rain ...









Lily had her first dance recital on May 17th.
The entire recital centered on movie songs/themes ... Lily's class performed "Singing in the Rain."
She couldn't have been cuter.
Even when her hat fell off mid-performance ...
she put it back on and kept right on going.
I'm so proud of my little sweetie!

Why yes, it is another brownie recipe ... sort of!

Peanut Butter Brownie Bites


I made the cupcake bites awhile back for Mother's Day but wasn't too smitten with the texture of the cake (too slimy.) I decided to try my hand at something similar ... using my all time favorite .. BROWNIES! I first baked a batch of brownies (sans nuts.) Let them cool completely. Then using an ice cream scoop I scooped up little miniature balls (and rolled them between my hands to even them out.) I then spooned melted chocolate into candy molds and dipped a brownie ball in each, carefully pressing them in until the melted chocolate pushed up to the tops of the molds. I placed them in in the freezer for a few minutes until they hardened, then popped them out of the molds. The next part was a little trickier. I planned to just melt peanut butter flavored chips and dip the tops in that ... but the more I tried to melt the chips, the more stiff they became. So, my next thought was to use real peanut butter ... I mixed real peanut butter with chocolate chips and melted that in the microwave until it was of dipping consistency. It worked! I dipped the tops of the candies in the chocolate/peanut butter medley and topped with chocolate sprinkles. Then I popped them back in the refrigerator. I don't know if it was the fact that they were so chocolaty, or that we were having 90 degree temps here ... but they were pretty soft left out at room temperature ... so if you want to make these cute treats, I suggest storing them in the fridge. And how did they taste ...

Well, pretty darn good. Almost like a peanut butter truffle.
I will make these again.

I love it! I spend a great deal of time at our neighborhood Target ... I have been known to make multiple trips there in the same day (sad, I know!) I especially love shopping in the evening when the kiddos are home safe asleep in the care of their father ... I can peruse the clearance sections in peace and quiet ... I always find a hidden treasure. It's my go-to spot for cheap summer (ok, any season!) clothes for the kids, fun budget-friendly home accents, and I am loving their rotation of designer clothes & shoes made especially for Target (there is some super cute stuff!) I simply could never live in a city without one, EVER!

BEARY FUN!


We had a couple of classroom celebrations this week, so I made these Bear-at-the-Beach cupcakes for the kiddos to enjoy. I tinted the cake batter with blue food coloring (though they ended up looking more pale green.)

Then I frosted them with blue frosting and blue sprinkles. I used brown sugar for the sand. Each Teddy Graham was given sunglasses and trunks or a bathing suit via food coloring pens.



I set each one on a gummy Lifesaver inner-tube then topped off each cupcake with a paper umbrella. They were a bit time-consuming to make, but the kids seemed to enjoy them. I feel like I've been in the kitchen a lot lately though ... time for a break ... where's my beach and inner tube!?!?

I was honored to receive a variety of homemade Mother's Day gifts this year and they are all so very precious to me.

One of my most treasured gifts was this little doll that Zach's teacher made for each member of their class. Given that Zach's birth was a "unconventional" and he was so small ... this tangible rememberance of just how tiny he was is so special. His Kindergarten teacher is such a sweet person who put so much thought into these gifts ... it really touched my heart. Thank you Mrs. Crowe!


Inspiration from the blog world ...


I used inspiration from the many I blogs I frequent to come up gift ideas for Mother's Day. I *attempted* to make these adorable cupcake bites from Bakerella. Mine did not turn out as neat and tidy as hers ... but they were fun to make. The insides were a little less cakey (more gooey) than I had hoped, so I think next time I would use half (instead of a whole) can of cream cheese frosting.




I also fell in LOVE with this idea when I saw it on Dandee's blog. I am hoping to make one for my home someday. But I was able to find a really great display case/shadow box for my Mom and make her a one-of-a-kind creation. I was very happy with how it turned out and can't wait to make more!
** My kids are now addicted to punching out butterflies and might be making smaller versions for end-of-the-year teacher gifts!

Pizza by us.

We all love pizza in this household ... so making "homemade" pizza is always fun. I found a new ready-baked thin crust at the store and we proceeded to decorate it with all our favorite stuff.

Zach began with the olive oil.

Then we added a thin layer of marinara.

Next came cheese ... lots of cheese!

I added chopped spinach, sun-dried tomatoes, a lil' oregano and feta cheese
to the "adventurous side." Thin slices of mozzarella top it off!

Spring Cleaning Underway!


I have been taking some time away from blogging ... amazing how much I can accomplish when I don't get lulled into blog-hopping my afternoon away. I am in the midst of spring cleaning and so far have accomplished cleaning and organizing my pantry and master bedroom closet. Last weekend I was able to finish all my pruning and weeding/clearing of the backyard flower beds. I am happy to report I also FINALLY planted the last of my river birch trees I bought last month. Whew! Yet, still so many closets, drawers, nooks and crannies to get to! I'll be back to posting soon ... have some pictures of s'more cupcakes and homemade pizza to share!

Chicken Noodle Soup


Yesterday was a busy day in the kitchen (see hidden veggie brownie post) ... on top of my sneaky dessert, I made homemade chicken noodle soup. I had a leftover rotisserie chicken and given our chilly spring weather, soup sounded perfect.

I used this recipe as my jumping off point: Tyler Florence's Chicken Noodle Soup

My chicken was already cooked, so I took the remaining meat off the chicken and set it aside. In a large pot I placed the entire chicken carcass (I hate that word), one chopped large onion, a handful of baby carrots and a couple of ribs of celery, with leaves. I used a few whole cloves of garlic, some dried thyme, dried dill, a bay leaf and salt and pepper for seasoning. I filled the pot till the water just covered the chicken, brought it to a boil, then turned it on low and let it simmer for a couple of hours.

The house certainly smelled like homemade soup ... yummy!

I then drained the stock over a mesh strainer into a bowl. Back in the empty pot I drizzled a little olive oil and sauteed the onion, garlic, carrot and onion (as per Tyler Florence's recipe.) I also threw in some fresh thyme from my yard (I LOVE to grow herbs!) and another bay leaf, salt and pepper, a teaspoon of Old Bay seasoning and a teaspoon of chicken base. Once the veggies were soft I added the stock back to the pot, brought it to a boil and added in 3/4 of a bag of whole wheat wide egg noodles. I let them boil for about 8 minutes then added the chicken, and 1/2 cup chopped kale (I'm not a parsley fan) and simmered till dinner. Served with grated parmesan on top ... mmmmm!

to hide or not to hide ...


My first son, Zach, is THE BEST EATER ... always has been. Loves veggies, isn't afraid to try new foods, always eats what is prepared, asks NOT to go to McDonald's and actually prefers my home-cooking {blush.} And then ... there is Lily. Picky, picky, picky. There was a day when she actually ate veggies ... used to ask for bites of my salad, etc. But, sadly that is no longer the case. And then Nic ... well, he seemed to come out of the womb with an aversion to anything that isn't a cracker.

So ... a few months back I purchased this ...


Read it cover to cover. And then decided it was too much work and besides ... I want my children to learn to eat and LIKE readily recognizable vegetables as part of their meals.

Ok, well ... that was then. I feel like nutritious food consumption on my younger kids part has been on a swift and scary decline over the last month or so. I'm getting nervous. So, I am really trying to incorporate new and exciting vegetables, fruits, etc. into our meals. And yes, I actually thought I would give this recipe a try and sneak carrot and spinach into brownies. Yes, that is correct, Veggie Brownies.



So ... the process started with me steaming then pureeing carrots and spinach. That actually was the most time consuming part. If you follow Jessica's plan you actually set aside a day to steam and puree all your veggies, then package them in neat little containers so you can pull out the required "liquid gold" at a moment's notice. This was all very last minute yesterday, so of course I was a bit under-prepared. But steaming, and pureeing aside, the rest of the recipe was fairly easy.



I baked the brownies and they were done at 35 minutes. I didn't check them before then as the recipe called for a baking time of between 35 and 40 minutes. They were definitely done. Next time I'd probably pull them out a little bit sooner. Mine did not have the smooth top like the ones pictured in the book, but if they taste good, well, who cares!

I let them cool for hours (as recommended, otherwise Jessica says you can taste the spinach.) I tried one after dinner, and ...




blech.



Ok, too be fair, they weren't HORRIBLE. But there was something discernibly off about them. I decided to let them sit over night and see if the flavors melded better.

Today's verdict: Not too bad! Maybe I am just getting used to the flavor, but the strong "off" flavor I was detecting yesterday seems all but gone today. I taste more of the chocolately goodness I was hoping for. They remind me a bit of a dense chocolate zucchini bread.




And guess what ... my baby actually ate one last night! He who snubs most brownies and chocolate cookies (I'm convinced that is because he had a steady stream of them in utero.) I couldn't believe the little man, notorious for chewing up and spitting out anything he doesn't like, actually swallowed a spinach brownie ... and pointed to the pan for seconds.

Another triumph ... Miss Picky downed one today for a snack. Okay, so maybe the occasional hidden veggie isn't too bad!

Memory Monday

I swore up and down I'd never get one ... I'm so "risk-averse!" But, lo' and behold, look what ended up in our backyard ....





The kids have really been enjoying it (ok, yes, ME TOO!) Still a little bit nervous about letting Nicholas onboard (he is NOT risk-averse!) But he's usually preoccupied with emptying all the sand out of the sand table!

Take me there!

Everything about this picture is delicious. I adore the rustic buffet, the food looks scrumptious, and I love the simplistic beauty of the decor. I can imagine fixing myself a plate full of goodies, relaxing in a chair by a warm window, gazing out at a beautiful garden and enjoying the company of good friends!

It's The Hard-Knock Life! (ok, not really!)

Last night was the big night ... my mom and I took Lily to see the musical Annie! This was months in the planning and we just told her yesterday afternoon that she was going, so it was a big surprise! I insisted she take an afternoon nap so she would be well rested for a long night of fun!

First matter of business ... getting gussied up! A little girl needs a new dress for her first trip to the "theater!" She looked adorable in her new Pears + Bears dress, complete with red shoes and red hair ribbons.

Then it was off to pick up Grandma from work. The original plan was to have dinner with "just the girls" but we decided to join the guys and all have dinner together. So ... a quick bite to eat at Red Robin and the girls were on their way!





Once inside the theater, our first stop was the souvenir table where we picked up a keepsake program and Annie bag.


Lily kept asking when the show was going to start ... so I was happy when it finally did! I was a big fan of the Annie movie when I was younger and bought Lily the movie a couple of years ago. Since then, she has also become a big fan and knows almost all the songs. It was so fun to see the story come to life on the stage and watch Lily sing along wide-eyed and mesmerized! The cast was great, but the true star of the show was Miss Hannigan played by the talented Lynn Andrews. She did an AMAZING job. She brought such fun dimension to the character and Lily giggled all night at Miss Hannigan's quirky antics!


It was a long show that didn't get over till about 10 pm ... Lily did get a little sleepy at the end but did manage to stay awake for the whole thing. She was such a little lady for the entire program. However, she was not keen about having her picture taken at the end!


Show's done ... and so are we!

We stopped on the way home for chocolate chip cookies at McDonald's drive thru ... who can beat three cookies for a $1! Lily wanted a treat at the show but after waiting in an insanely long bathroom line during intermission, there was no time for cookies. She waited very patiently for her cookies on the way home ... and even chose to save the the extra two for her brothers (lil' cutie!)

It was such a fun evening and I am so glad I was able to share it with my sweet mother and daughter. Thanks Mom for joining us ... it wouldn't have been the same without you!

Adventures In Bread Making ...



I would say my track record for baking bread is at best 50/50. I hate it when the dough doesn't rise ... something about it makes me feel domestically inept. And when the bread actually works and is edible, well ... I guess there is just a "Me Woman, Me Bake Bread!" happiness! Yesterday I baked Rosemary-Lemon No-Knead Bread from a Williams-Sonoma recipe ... mostly because the "No-Knead" aspect made me think I could possibly do this without harming the fragile dough too much!

This was not a quick task! I started the night before as the bread does its first rise for 12 to 18 hours. Here is my dough before I tucked it in for the night ...

** I used half white flour and half whole wheat flour to make it a little "healthier!"**

Here it is 18 hours later! (I let it rise that long simply because I got side-tracked doing other things. But I didn't really notice much of a difference in the dough between 12 and 18 hours.)



Here it is after the second two hour rise ... headed to the oven! (Yes, my pot was twice as big as necessary!)

And ... the final product!

It came out of the oven just as we sat down to dinner ... so, of course we had to sample! It has a wonderful crisp crust and soft chewy inside ... perfect! The rosemary lemon flavor is subtle but delicious ... it would be wonderful dipped in some good olive oil. It really was very simple to make ... you hardly do anything at all! I think it would probably turn out fairly similar if you just baked it on a cookie sheet or used a oven-safe stock pot (cover any non- metal handles with aluminum foil.)

** I made myself a grilled cheese sandwich with the bread and sharp cheddar today ... extra yummy!

April is National Child Abuse Prevention Month

Nearly four people die every day in this country as a result of child abuse and neglect. Most are under 4 years old, and almost half don't even live to see their first birthday.


If there is something that keeps me up at night, it is the thought of helpless children being abused. Nothing gives me greater sadness. I look at the light in my own childrens' eyes, see their smiling faces day-to-day and ache for those children who do not have the comfort of a loved one's patience and love. I hope to become more involved in this cause and this is definitely a great month to find out how I can. To me, even one child saved from abuse would be worth any effort I might be able to give.

ravishing radishes ...

*** New*** Memory Monday!

In my endless of hours of blog "research," I have found that I enjoy and look forward to blogs that have a daily/weekly special feature. I have decided that a few recurring theme features for my own evolving blog would be fun. Nothing set in concrete ... just going to try a few out and see how I like them. For Monday's ... I'm thinking Memory Monday ... a photo or snippet from the past. Something to make us all smile.

I may be completely off base, but I am guessing our swimsuits would be pretty hip again in today's popular retro/vintage revival! We spent so much time at Lake Tahoe when we were little, that to this day, the smell of "coconutty" tanning oil always reminds me of being at that beach!

Banana-Oatmeal Loaf


Well, the Easter candy is nearly depleted, the baby shower cake is long gone ... and I am having a baked goods craving. So ...

Nearly black bananas on the counter
+ Kids who love quick breads
+ Mom who loves quick breads even more than kids and hasn't been on the elliptical in weeks
= trying out a Cooking Light recipe and making it a smidge healthier!

Banana-Oatmeal Loaf
(adapted from Cooking Light Annual Recipes 2005)

1 1/2 cups all purpose flour (I used wheat flour)
2/3 cup sugar (I used 1/3 cup white sugar, 1/3 cup brown sugar)
1/2 tsp. cinammon (this is my add)
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt

3/4 cup regular oats
1 cup mashed ripe bananas (about 2 large)
1/3 cup low-fat buttermilk (I used 1 tbs. vinegar + skim milk to equal 1 cup)
1/4 cup vegetable oil (I used 1/4 cup unsweetened apple sauce)
1 tsp. vanilla extract
2 large eggs, lightly beaten
Cooking spray

  1. Preheat oven to 350 degrees.
  2. Lightly spoon flour into dry measuring cups, level with a knife. Combine flour and next 5 ingredients in a large bowl, stirring well with whisk. Stir in oats.
  3. Combine mashed banana and next 4 ingredients, add to flour mixture. Stir just until moist.
  4. Spoon batter into an 8 x 4-inch loaf pan* coated with cooking spray. Bake at 350 degrees for 55 minutes or until a wooden pick insterted in center comes out clean. Cool 15 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack. Yield: 12 servings (serving size: 1 slice).
*I used three mini loaf pans in place of the one large pan. Bake for approx. 35 minutes.

I was able to purchase two sets of these adorable Fruit Crate Glasses from Williams Sonoma using gift cards my brother and mother gave me. I am so excited to use them ~ they will be perfect for summer breakfasts and brunch! I was eyeing ones similar to these last season and a post on Sweet Life In the Valley reminded me about them. The giftcards have been burning a hole in my pocket and this was a perfect purchase ... still have some left to get some cute summer serving pieces perhaps!
